Chicken pulao is a famous, delicious dish full of aromas of spices. The pulao rice is cooked in chicken stock with different spices, onions, and ginger-garlic making it so flavorful.

Chicken Pulao is a delicious Pakistani dish that requires basic ingredients, mostly available in Pakistani or Indian Pantry. This recipe is very much customizable; you can adjust spices as per your preference. You can adjust the heat in your meal or use an alternative ingredient if you prefer one over the other.

This recipe goes perfectly with any type of yogurt chutney, sauce, salad and your favorite gravy.

If you have picky eater at home or, you have kids, everyone is going to love it.

How to make chicken pulao rice

Step-by step-process to make chicken pulao by using Ocean Pearl basmati rice. You can use any type of rice you have at home. However, if you ever have to try basmati rice, ocean pearl rice is my recommendation.

Things you need for making simple and delicious chicken pulao rice

  • Chicken legs or chicken leg quarters. cute in 2 to three pieces. It depends on your preference, you may use whole chicken cute in 12 to 16 pieces.
  • 1 medium size Onion thinly sliced.
  • 1 tbsp garlic paste or chopped garlic.
  • 1 tbsp ginger paste or finely chopped ginger
  • Salt to taste
  • Red chili powder 1/2 tsp to 3/4 of tsp depending on the level of heat you prefer.
  • 1/2 tsp black pepper
  • 2 tbsp yogurt
  • 4 tbsp vegetable oil

one jalapeno pepper (optional )

1/2 Garam Masala (optional)

How to make Chicken pulao with basmati rice at home with simple ingredients

Fry onion for a couple of minutes in oil. do not turn them dark brown otherwise, your pulao rice will be dark-colored. Add ginger and garlic paste. Saute’ for a minute and add chicken. as soon as the chicken changes color from pink to white, add all the spices. Once you see the chicken is halfway cooked, add yogurt, and cook for another 4 to 5 minutes. At this point, you can add a cut or whole jalapeno for extra flavor in chicken broth.

Now add 3 cups water for the same cup you used to measure rice.

Let it cook and boil for several minutes until you see the chicken is fully cooked and not falling apart. Add a 1/2 tsp for garam masala if you like for extra flavor and aroma.

Cover the lid and let it cook.

Make sure you do not boil for so long the water reduces considerably, resulting in undercooked rice.

How to make chicken stock for chicken pulao

Drain your soaked basmati rice and add to the chicken broth (yakhni).

Just stir once or twice so the rice cooks evenly.

Once water is dry, slow down the flame to low and cover and let the rice get fully cooked and water gets dry.

Dish out rice and serve. This recipe is both kids and adults favorite. You can never go wrong with making these rice, Adjust the spice level, You can complete skip all the spices except salt, black pepper and cumin seeds.

Rice to water ratio that you need for cooking basmati rice on stove top.

For me the rice and water ratio that works perfectly is as follows:

1 cup rice = 1 cup water + 1/2 cups water (of the extra for the amount of rice ) = total water is 1 n a half cup

2 cups rice = 2 cups of water + 1 cup water = total water is 3 cups of water

3 cups rice = 3 cups of water + 1.5 cups of extra water = 4.5 cups of water

Extra tips for cooking rice

Make sure your pot is 6 quarts at least so the rice can rise well. I use Calphalon pots for making rice. They are amazing.

Rice soak time depends on what type of rice you are using.

I used Ocean Pearl basmati rice and they do not need to soaked for a long time.

when you add water in rice , the water level should be 1/2 an inch higher than rice.
