Things you need need for making chicken tikka

Boxed or premade chicken Tikka Masla – Shan Tikka masala or Shaan tandoori Masala

>6 to 8 Chicken leg quarters or leg and thigh Skinless

>1/2 cup vegetable oil

>2 tbsp Ginger and garlic paste – You can use Premade storebought ginger garlic paste

>4 tbsp Lemon juice

Salt to taste (optional)

I would add a pinch of cumin seeds for an extra kick. If you don’t have it, don’t stress over it.

How to make chicken tandoori

Take oil in a bowl. Add all the ingredients including, one packet of premade tikka masala, lemon juice, ginger, and garlic paste. Mix everything well.

Apply the mixture on chicken leg quarters. and let it marinate for at least 6 to 8 hours. You can refrigerate for up to 24 hours that help the marinade penetrate well into the chicken legs.

Steam chicken helf way and then air-fry

You can steam on the greased cast iron skillet. Since chicken has oil in it already so you do not have to add more extra. Let the chicken get cooked on both sides. At this point, you can air-fry chicken for another 10 to 15 minutes to make the exterior a little crispy.

O you can fully steam the chicken and let the water evaporate completely. Chicken legs are ready when the masala starts sticking. Make sure you do not cook on extremely high flame as it may cook from outside leaving inside uncooked.

Air fry chicken in your air fryer or ultra-convection oven on about 380 degrees for at least 25 minutes depending on how many leg quarters are cooking and how well your oven performs.

Can I use small chicken pieces for the recipe

Instead of using chicken leg quarters you can use smaller pieces of leg and thigh. Ask your local butcher to cut leg quarters in three or four pieces as you prefer. Apply the same marinade and keep in mind that the cooking time will reduce because chicken pieces are now smaller.
